CHAPTER 27

Russell and Jessica had given the orders and were waiting outside the kitchen. She kept telling him how he should handle himself. “Don’t take too many orders to the table at a time. Just take one or two. The last thing you want to do is drop the food. And when you serve, if the guest is on your left, serve with your right hand and vice-versa. You want to get all the appetizers first and as fast as possible. Not one appetizer first and the others at some other time. It’s the same for the main dishes or the desserts. Keep everything simple.”

They waited until the chefs prepared all the appetizers, and Jessica showed Russell how to carefully hold them. He followed her and took appetizers to other tables.

The manager was keeping an eye on Jessica, and he liked how she led Russell. He had put them in the same team because she was experienced unlike Russell.

Russell did work as a waiter in the past, but that was only at a cheap cafe, and he only used to serve coffee and bread. Nothing else.
